Vintners Resort invites you to experience our three venues for dining and drinks – popular among locals and visitors alike. The showpiece is John Ash & Co. restaurant, one of Sonoma County’s original farm-to-table restaurants, offering a beautiful vineyard setting. For the freshest cuisine, Executive Chef Tom Schmidt selects fruits, vegetables, and herbs from our own culinary gardens, including our fig and olive orchards. We also source ingredients from over 30 local farms and food producers. Of course, Vintners Resort provides the perfect setting to showcase the very best wines from regional winemakers and growers.

Meet Chef Tom Schmidt

Bringing a wealth of knowledge and creativity, Executive Chef Tom Schmidt oversees all three of our restaurants at Vintners Resort in Sonoma wine country. Though Tom is an expert in formal culinary methods, his skill is not driven by technique alone. His cuisine celebrates his intuitive understanding of complementary flavors, textures, and colors, while highlighting seasonal foods at their freshest.

Tom’s fascination with food and cooking extends back to his early childhood when he helped his mother in the kitchen, preparing meals for their family of eight. He attended the Bay Area’s Contra Costa College, studying culinary arts under the instruction of Chef Kenneth Wolff and working as a sous-chef for three years, honing his skills in all aspects of kitchen operations and prep work. As an executive chef in Woodside, California, and later as owner of a catering company, he learned that working with the freshest ingredients and letting their flavors speak for themselves is the most important aspect of cooking.

Tom’s passion for fine cuisine took him to Europe, where he opened the highly regarded Topaz restaurant in Bremen, Germany. Years of experience and his love of California led him to our team here at Vintners Resort. The setting of John Ash & Co., in the bountiful heart of Sonoma County, is one of the greatest gifts any chef could desire.
